On Friday, May 3, Independence High School's students and staff had the opportunity to honor Cinco de Mayo with an authentic Mexican lunch. The school's talented cafeteria staff member, Selma Pruchinski, who moved to the United States from Mexico a few years ago, shared her culinary expertise by preparing an authentic Mexican lunch menu, made entirely from scratch. "The celebration of Cinco de Mayo provides a unique opportunity to learn about the history, traditions, and contributions of the Mexican community and experience and appreciate the rich flavors and traditions of Mexican cuisine," said Service Manager Francine Kane. The students’ favorite dish was the chicken quesadilla!
